If you're anything like me, whenever the weather is a little chilly, you crave comfort food. One of my guilty pleasures will always be chicken and dumplings. Here's the recipe I grew up on.
- Cook a pound of chicken in a dutch oven filled with boiling water and a dash of salt and pepper
- Leaving the water in the pot, cut up your chicken into bite size chunks
- Cut up at least a couple cans of biscuits into quarter size bites
- Put biscuit dough back into the pot (the water is now your chicken broth)
- Add 1/4 cup to a 1/2 cup of milk
- Keep stirring!
- Dumplings will start to puff up
- When the dumplings puff down, put chicken into the pot with dumplings
- Add more salt and pepper to taste, if needed
- Scoop out a healthy bowl
- Sit down in front of the tv and turn on Real Housewives
- RELAX AND ENJOY!!
Comfort in a bowl.
